Broken/Crushed Rice Ladoos

INGREDIENTS:
  • 250 gm. Broken/Crushed Rice
  • 100 gm. Puffed Paddy(Lai / Khai in Oriya)
                                                                       Puffed Paddy
  • 250 gm. Jaggery
  • 100 gm. Curd
  • 500 ml. Oil
  • 500 ml. Water
PROCEDURE:
  • Keep the broken rice in a bowl. Heat 100 ml. oil in a Pan and add that hot oil in the broken rice and mix it well.
  • Heat a Pan in a medium  flame with 250 ml water and put the Jaggery and stir it continuously. Cook it until it becomes thick. Pour it in a bowl and keep aside.
  • Soak the puffed paddy with little water to make it soft.
  • Add the broken rice, soft puffed paddy and curd all together in a bowl little by little and mix well.
  • Make small balls(ladoos) out of it and keep them aside.
  • Heat rest of the oil(400 ml.) in a Pan in high flame. Once it becomes hot, lowers the flame. Now add the ladoos into the oil and fry it until they become little brown.
  • Take out all the ladoos and add them into the above prepared thick Jaggery juice and mix slowly.
  • After 15 minutes,take out all the ladoos from the Jaggery and keep for cooling in plate.
  • Broken Rice ladoos are ready to eat. It can be used by keeping in an  air-tight container in refrigerator for  10 to 15 days.
